  • The primary reason for such wide use in the food industry is its conformance with the "from farm to fork" principles laid down by EU Directive 178/2002 Article 18. This states that the traceability of food shall be established at all stages of production, processing and distribution and that it encompasses all activities from growing, manufacturing, distribution, to retail and food services. For a manufacturer, consumption must be recorded to link the consumed material to the end product lot.  This includes materials such as flour, spice and packaging materials. Any equipment that contacts the ingredients in the creation of intermediate or final products must be recorded. For all but the simplest food companies a manual recording approach to compliance is nearly impossible.
